As soon as you open one of our bags, the coffee comes into contact with Oxygen in the air and the coffee starts to stale and lose flavour as the aromatic compounds sublimate. You can slow down the time it takes for your beans or ground coffee to stale by decanting it immediately into an appropriate container which minimises its exposure to air. Maintaining your coffee's freshness and flavour, also requires it is kept away from excessive moisture, heat and light.
Therefore, we recommend you store your coffee in an air-tight metal or ceramic container and keep it in a convenient, but dark and cool, location. Ideally your container should include a one-way value to release any residual CO2 which continues to be released from the coffee as it rests after roasting. Our preferred coffee storage canister is the Coffee Gator, an affordable steel canister.
We do not recommend refrigerating or freezing your beans because contact with moisture can also cause it to deteriorate.
